• Brush the steak with oil (Do not use Olive Oil – It burns to soon – at 100 degrees) to prevent it sticking, but don’t pour loads of oil onto the flat plate or it will smoke and burn
• Turn it only once so each side caramelises properly
• Set it aside to rest for a few minutes before tucking in

• Spice up your barbecue with flavoursome rubs and marinades
• Rubs are dry herbs and spice mixes used to coat food just before cooking for a tasty crust
• Marinades are a liquid consistency and take a little longer to infuse
• Thin steaks, small cutlets and seafood will need less time than large (or lesser quality) cuts of meat
• Turning food regularly in a marinade helps to infuse the delicious flavours. To toss food without getting your hands dirty each time, place the meat or vegetables within the marinade in an airtight container that you can turn without risk of leakages

So remember – The secret to cooking a perfect steak on a BBQ lies in getting the grill very hot and then grilling the steak for just the right amount of time. The tricky part is working out just what the right amount of time is. The major determiner of how long is needed for the best steak is the thickness of the meat. This can easily be measured. Other factors that impact on how hot the grill is are however more difficult to measure because each barbecue is different, and even the same barbeque has hot spots , it is best to use a little trial and error on your own barbeque and adjust each time to improve on your previous performance. To do this you need to time how long the steak is on the grill for and make notes of this against the thickness of the steak. Then follow the steps below of how to cook steak:

1. Take the steak out of the fridge well in advance of cooking it so that it is at room temperature all the way through before you put it on the barbie. This is very important, the steps that follow will fail if the meat is still cold in the middle when you start kooking.
2. Season the meat with the seasoning of your choice. Simple salt and pepper, spicy rub, marinade, whatever you prefer. If you use a marinade however, watch out for flair up. See preventing flair up to avoid problems.
3. Measure the thickness of the meat and calculate the length of time it should grill for. This is a subject all of it’s own and it varies from BBQ to BBQ but a rough rule of thumb is 4 minutes per cm. The important thing is to measure the time you leave it on the grill. If 4 minutes per cm turns out to be too little or too much for you BBQ and your preferred doneness, note this and vary the time accordingly next time you grill steak.
4. Heat the grill on high.
5. Place the meat on the grill and leave for half the required grilling time.
6. Turn the meat over and leave on the grill for the remaining time.
7. Remove the meat from the grill and place in a closed container for a minimum of half the grilling time, preferably a warm container but not one that hot that the food continues to cook. This is an important step. If all has gone according to plan the meat should be quite rare when you take it off the grill. It needs time to sit for the blood red middle to transform into perfect pink.

Don’t you believe it. Instead, take the attitude that the tank’s half full. You see, there are ways to mix compliantly lawful daily motoring with driving thrills as edgy as you want ‘em. The whole idea is to prevent the two things overlapping in public. So throughout the working week you drive cool on the street, with no hint of feral behaviour. Come the seventh day, though, you leave Mr Lawful in the closet and let rip at a trackday or a sprint event. A what? At where? It’s precisely because anything smacking of spirited (and, face it, sometimes inappropriate) pedalling is so oppressively unwelcome in public, that more and more keen drivers are heading to racetracks. Not to race, mind, but to have a real drive on a roadway where the law’s long arm doesn’t reach, and the only cameras are for happy snaps and shutterbugs. Because trackdays and sprint events are adrenalin-pumping tonics that offset the humdrum of moribund daily driving, they’re a booming growth industry. Although each aims to feed the need for speed and improve driving skills, the respective formats are quite dissimilar.

Trackdays typically divide participants into several performance-related groups, and the day is split into 15 or 20-minute segments of track time for each group in turn. Individual lap times may have little or no priority. And while every group has its fastest driver/s, there are no winners as such. Because they’re not racing, understand. Sprint events, or Supersprints as championship series are known, also run in groups of, say, a dozen or more cars (released in pairs), but each bout covers a specific number of accurately timed flying laps, usually three or four. Ordinarily, the groups get at least four goes each through the day, or not unusually twice that many. At day’s end all drivers best single lap times are listed in order from quickest on down to the, er, least quickest. The swelling demand for both sorts of events is keeping popular venues booked out for months ahead. Variously promoted by car clubs, circuit managers or driver-training schools, some events are limited to fewer than 20 drivers, others accept up to 100, plus some reserves, and even then are turning latecomers away. While the focus generally centres on registered street cars, most events also accommodate seriously altered ‘production’ models along with specials and dedicated racing machines. Even though there generally isn’t an admittance charge, the non-racing nature of trackdays and sprints means they’re not crowd-pulling spectator sports. However, enthusiasts and anoraks are drawn because the pit and paddock areas are open, and the competing cars, crews and drivers are reasonably accessible to visitors and voyeurs.

Participation doesn’t demand a costly race-wear wardrobe. That’s an option of course, but the budget-conscious get by with just an approved helmet (possibly hired from the event organiser), closed shoes and no-frills long sleeved neck-to-ankle coverage. While the atmosphere at these events is relatively casual, it’s not forgotten that fast fun involves serious speeds and elements of risk. So it’s not open slather; there are some simple formalities to fulfil before grabbing your tiger by the tail. For example, besides a valid street driver’s licence, you need a basic competition licence — the (low) cost and requirements of which vary depending on the event, the track and under the auspices of which governing motorsport body the event is conducted. At the track, the car is inspected (scrutineered) to verify that the safety aspects are up to scratch and to determine in which defined class the car belongs. For sprints, the car must carry a specific timing device (bought, borrowed or hired). During practice sessions, first-time drivers’ skills and lap times are assessed as pointers to being grouped with others of similar performance. Before being let loose on the track, all drivers without exception must attend a briefing that outlines the day’s format, explains on-track conventions such as no overtaking through corners, and adds other info appropriate to a successful and safe speed.

Depending on circumstances (and finances), you may prefer to use an unregistered car — one that’s driven only on Sundays as they say. But one of the beauties of trackdays and sprint events is that you can drive your street-registered model to the track, have a good go, then drive home to revert to the weekday commutes. Very occasionally someone may clout a wall or guardrail, but for the vast majority of competitors, worn tyres are the only visible evidence of the day’s activities. Hence a spare set of wheels shod with ‘track’ tyres make as much sense for cars that are driven to-and-from as for those trailered. In theory, any car that passes scrutineering can have a go. In reality, drivers attitude and/or ego dictate that not many non-sporting cars front up for trackdays or sprints. Seldom more than once, anyway… That’s not to say the choices are limited to the latest, greatest, fastest current models. The options range back to the ’80s, ’70s and ’60s to account for sightings as diverse as the occasional hot Alfasud, Suzuki GTi, Hillman Imp, Cortina, Anglia, 100kW Corolla, Torana, Civic, Beetle and classic Mini to name just some. Assorted Holden/Commodore/Falcon V8s supply action aplenty for the musclecar-minded. They don’t have it all their own way if HSV and/or FPV models (or Falcon XR6 Turbos) are in the neighbourhood.

The likes of Golf GTI, RenaultSport Clio and Megane, Focus XR5, Mazda 3 MPS and MINI Cooper S are in their elements in both the daily and seriously sporty environs, and give their track rivals no peace. Sportscars are naturals on the track, or ought to be. Whether standard or ‘improved’, benchmark sportsters such as the Lotus Elise and Exige acquit themselves with distinction in any company. In contrast, plusher grand-touring examples such as Porsche Boxster, BMW Z cars and Mercedes SLK rarely venture out in open events, though may be regulars at events staged by their respective marque clubs. Clubman cars habitually are among the swiftest runners of all. Beside featuring enticing bang-for-your-buck factors, clubbies offer the fullest embodiment of the road-and-track philosophy. They’re not the most undemanding of street cars obviously, but their responsive chassis dynamics and ability to punch way above their weight bring lap times that are in a league of their own.

Mazda MX-5 models from 1990 to present rival clubman cars for numerical popularity in sprint driving. Frankly, while standard MX-5s are happy to lap raceways very capably and entertainingly, they’re not blisteringly quick. But help is at hand. Or at wallet… Like all steerers of all popular makes and models with ambitions to be trackstars, time-conscious MX-5 drivers are courted by a wealth of handle-better, brake-harder, steer-sharper and go-faster modifications. Those are admirable and addictive aims to be sure, but every step along the ‘modified’ path is a reminder that more speed costs (much) more money. The good news is that judiciously applied aftermarket improvements shave lap times without infringing road legality and seriously eroding driveability. By now a whetted appetite may prompt the question of how to get into the sprint/track-day scene. Car clubs and racetracks orientated towards such events are prime sources of information about who does what with whom. Internet searches can be telling too; Googling track days, lap dash events and car sprint events reveals useful pointers.

Color choice basics

Colour choice is so much more than simply picking a colour because you ‘like” it. Some will argue “to each his own” or “It’s your car, paint it what ever you want”. This is true, but you are painting it to look better, right? Why just get colour on it for the sake of getting colour on it. Why paint your favorite colour on it when your favorite colour is not going to make the car look it’s best? We have all heard that black will show waves or poor body work. White on the other hand hides them. This is just the start of colour choice. We can agree that even though you may love black cars, painting a wavy old beast a cut and buffed black would be wrong. It goes beyond “taste”, it is just plain wrong, if your desire is a nice looking car.

There are a few different issues when talking about colour choice.

Cost:

If you have a budget for you paint you best check on the cost before you commit to a colour. In one brand of basecoat a price can go from approximately $190.00 to $350.00 for 4 litres. Any colour with a lot of red or pearl is going to be more expensive for instance. These are not custom colours, just regular old colours off new cars. Whether you plan on BC/CC (base coat/ clear coat) or SS (single stage, where no clear is applied over it) will effect cost. Pick a colour and go to your paint store to see all costs, colour, clear, hardeners, reducers, any sealers you may want, etc. You don’t want to be surprised when the car is sitting there ready for paint.

Resale Value:

Yeah, I know, you’ll never sell it. Well, I have to tell you, you most likely will someday. There are lots of cars painted pastel pick from the 1980′s that are darn near un-sellable today. I know of one, a friend of mine passed away unexpectedly and his wife almost had to give away his ’34 Ford. It would have probably gotten up to $10,000 more if it wasn’t a out dated trendy colour from the 80′s. Really watch those trendy colors, they can kill you.

Does the color “work” on this particular body style:

Not all cars look good in all colours. Again, I am not talking “taste” here, I mean some colours just DON’T “work” on every car. Is that just my opinion, well yes and no. It is also the publics opinion in large too. GM spends a lot of time and money on marketing and research to come up with the colours it offers. That red would not be a colour offered on that car for good reason. This is a very gray area (if you will pardon the pun), it does come down to “opinion”. But it is like speaking your mind about politics, sure you have the right, but you better “know the room”. Or you will suffer the consequences.

What do you want the colour to do:

This is where we return to the black show waves stuff. Sure black shows waves, but did you know it hides body lines? That’s right, it “softens” body lines. If you have a car with features you want to hide, black is the color. This is one of the reasons it is known for being “mysterious”. It hides a lot, leaving it up to the imagination. It also makes the car look smaller. The gaps look like black pin stripes, if they are not perfect it will look like wavy inconsistent width stripes. We all know what black and white do, any other colour just falls in the middle. It is a sliding scale, the darker the colour the more it’s effects are like black and the lighter the colour the more it’s effects are like white, simple.

Tip 1. There are thousands and thousands of colours out there. To pick one from that huge pallet would be very hard. This is what I feel is the best way to start the colour search, find a car the color you want and get the color code off it. It is that simple, the new car deal lots are full of cars in every colour imaginable, find the colour and there you will find the exact code of that color.

Tip 2. When you go to get your paint at the paint store ask if there are any “alternates” or “Variants” of the colour you have chosen. These “alternates” can be very different from the “standard” colour. The car you may have seen was one of these “alternate” colours. These alternate colours are different “batches” if you will.

Tip 3. DO NOT PICK THE COLOR OUT OF a CHIP BOOK! These chips are usually not even paint, they are ink. They are a “close” representation of the colour, they are NOT the colour. (for instance the alternates will not even be represented in the chip books).

Tip 4. I highly recommend you buy a pint of the colour you havechosen, take it home and spray it out. Use an old fender or something and really get a good feeling for the color before you layout your hard earned dough for a gallon or two. This is not only to see if the color is right, but to see if it covers well, and just how easy it will be to paint. The difference between colors and brands can be night and day in how user friendly they are. If you find that the color is nice but it takes 6 coats to cover, you may want to change the color choice or change the brand of paint. Some “value lines” can be very transparent, so you save no money because you may have to put on twice as much. A high pearl or metallic color may “model” easily, that may be a reason to scrap the color or brand.

Tip 5. After you have your color picked for goodness sakes don’t be a cheapie when buying your paint. Figure out how much you’ll need for the whole job. We are talking every thing you plan on painting, outside, inside, dash, jambs, trunk, everything. When you have an idea how much, add at the very least 20% more. If one gallon is enough, buy another quart. Buy all the paint you will need before you start painting anything. Get a few extra gallon cans and use them to intermix ALL the paint. You then have all the paint you need, no mismatched parts, no running out, you are set to go. If you have that quart left over when you are done, so what? Running out of paint is NOT pretty, it is a disaster in many cases. Now, why intermix? This is a very painful lesson you don’t want to learn the hard way. This is it in a nutshell, if you were to go to the paint store and have three gallons of the same formula mixed you would end up with three different colors! I will bet you a dollar, here is why. Some toners are very strong, just a drip will change the color. A couple of different people could mix them, some people mix better than others. There are other variables such as one toner used gets emptied and the next toner used has more solvent in it because it is new and has less strength. Now, these colors may not be “that” different. If you were to paint three different cars with those gallons you may not even see it. But if you were to paint your hood, fenders, and quarters with the three different gallons you sure would!

Tip 7. If you follow tip #6 you can skip this one. It is something that comes up once and a while. When you have chosen BC/CC, SS, Lacquer, enamel, what ever, paint the WHOLE car the same. Don’t paint the jambs SS and the outside BC/CC or something like that. Yes, it “can” work, but seldom does. The formula for the SS and BC of the same color is NOT (usually) the same. The SS paint is not just the BC that you don’t put clear over. For that matter just clearing a color will change it.

I could bore you with example after example of how I learned this information. Follow these simple tips and you will have fun doing your car, instead of experiencing the pain on your own. These are lessons that are very painful, believe me. Let me also say that I love color. It has been a big part of my life for over 25 years. I can appreciate just about any color as long as it is done nice. That does not mean that any color belongs on any car. It also doesn’t mean that because I would like a car a particular color that I would paint it that color. It has to “work” or it was a waste of time and money. There are many cars that you have seen grace the front cover of a magazine that would be a big ZERO if it were painted another color. And likewise there are many cars that just don’t get the attention they deserve because they were painted the “wrong” color. This may be the only car you ever restore, or at the very least one of only a few. The time you take to pick the color is time very well spent, that I guarantee you.
